Rochelle here & let me start by saying healthy eating doesn’t have to be complicated!
I get it — life is beyond busy & those grab to go, single use items look amazingly convenient! But the reality most are as bad for your body as they are for the planet…
For years I’ve been sharing my recipes with friends, families & fellow parents & decided to start this series for easy reference.
These cookie dough balls are vegan, low sugar & are eaten raw…
Give it a go & watch your cravings for processed sugar dwindle away!
– WHAT YOU’LL NEED –
1 1/2 cup chickpeas (peeled is best)
2 tsp vanilla
1/4 cup nut butter of choice (sub nut free or coconut oil for school friendly)
1/2 cup maple syrup or melted honey
1/4 cup flax seed
1/4 tsp salt (do not over salt)
1/8 tsp baking soda
1/3 cup chocolate chips
– STEPS –
- Drain & rinse chickpeas, air or pat dry
- For smooth texture peel the chickpeas (a gentle pinch will pop it right out!) — we always peel ours as it’s texture is more cookie dough like!
- Put all ingredients into food processor (if you decide to try a blender start with the chickpeas & liquid, then add other ingredients after it’s pureed)
- Put into a bowl & leave in fridge for 15min
- You can then roll into balls or, leave in the bowl & grab a spoon!
